Ingredients:

  • 1 can chickpeas, drained and rinsed (15 oz / 425 grams)

  • 1 can coconut milk (full fat or light, 13.5 oz / 400 ml) / ½ can coconut cream (6.8 oz / 200 ml) + 1½ cups vegetable broth (400 ml)

  • 2 tablespoons tomato paste (add more if desired)

  • 2 garlic cloves & 2 large shallots, finely chopped

  • 1 tablespoon coconut oil

  • 1½ tablespoons curry powder

  • Salt and pepper to taste

Optional:

  • A handful of fresh cilantro, chopped, for garnish

  • ¼ teaspoon cayenne pepper

  • Juice of ½ lime

Instructions:

  1. Sauté aromatics: Heat coconut oil in a saucepan over medium heat; sauté garlic and shallots for 2-3 minutes until golden.

  2. Add base: Stir in tomato paste, curry powder, coconut milk / coconut cream + vegetable broth, and chickpeas. Mix well.

  3. Simmer curry: Bring to a gentle simmer, adding water if too thick; cook for 10-12 minutes to let the flavors meld.

  4. Season dish: Toss in some cayenne and squeeze in juice of half a lime for added flavor; season with salt and pepper.

  5. Serve hot: Garnish with chopped cilantro for a burst of color and serve warm over rice or enjoy it solo!
