Ingredients:

  • 10-inch premade whole wheat / gluten-free pizza crust (homemade or store-bought)

  •  ½ cup tomato sauce (120 grams)

  • 2 teaspoons Italian seasoning

  • 2 cups assorted vegetables, sliced (onions, bell peppers, mushrooms, spinach300 grams)

  • 1 cup shredded mozzarella or vegan mozzarella (120 grams)

  • 1 tablespoon extra-virgin olive oil

  • Salt and pepper to taste

Optional:

  • 1 teaspoon chili oil

Instructions:

  1. Sauté veggies: Heat olive oil in a small skillet over medium heat. Sauté sliced onion until translucent, then add bell peppers and mushrooms; cook for a few minutes. Toss in spinach, season with salt and pepper, and cook for 1-2 minutes until wilted.

  2. Prep skillet: Heat a cast iron skillet with a little olive oil—make sure it fits your pizza crust size.

  3. Place crust: Set the gluten-free pizza crust in the hot skillet.

  4. Spread sauce: Mix tomato sauce with Italian seasoning, then spread evenly over the crust, leaving a small border around the edges.

  5. Add toppings: Layer sautéed veggies evenly over the sauce, then sprinkle with shredded mozzarella cheese (or Follow Your Heart Dairy-Free Shredded Mozzarella for vegan).

  6. Cook pizza: Cover the skillet and cook on low heat for 5–10 minutes, until cheese melts and crust is golden. If browning too quickly, transfer to a preheated 425°F (220°C) oven for 2–3 minutes to finish.

  7. Serve hot: Remove from heat, let it cool for a couple of minutes, drizzle with chili oil if desired, then slice and serve warm!
